Pepperoni Pizza Cups
Pepperoni pizza cups are a delicious and low-carb snack perfect for satisfying pizza cravings without the guilt. These bite-sized treats are enjoyable for all and they're quick to prepare, taking about 20 minutes from start to finish-perfect for parties or a quick snack.

Ingredients
- 24 pepperoni slices
- 1 cup mozzarella cut into 1/2" cubes or shredded cut into 1/2" cubes or shredded
- ¼ cup tomato paste canned or in a tube. I prefer the tubed paste so I can store the rest in the fridge and it doesn't go to waste.
Optional Pizza Toppings
- Fresh basil shredded
- Red pepper flakes
- Black Olives
- Mushrooms
- Bell Peppers
- Jalapenos
- Cooked sausage
- Diced Ham
- Cheddar Cheese
- Any other favorite pizza toppings you might have
Method
- Preheat the oven to 400 degrees.
- Make 4 small quarter cuts in each pepperoni, without cutting all the way to the middle. This will help you fold the pepperoni into a cut to fit into each muffin holder nicely.

- Place the pepperonis in a mini muffin pan, allowing the cut sides to overlap and create a cup.

- Bake pepperonis in a preheated oven for 5 minutes, until crispy.
- Remove the pepperonis from the oven and dab with a paper towel to absorb the residual grease from the muffin pan.
- Spoon half a teaspoon of pizza sauce into each cup.
- Place a small cube of mozzarella, or 1 tablespoon of shredded cheese on top of the sauce.
- Add your favorite toppings and spices to each cup.
- Return to the oven for 5 minutes, or until the cheese has melted.
- Remove pepperonis from the pan, transfer to a plate, then garnish with fresh basil (optional).
Notes
You can substitute any kind of cheese you want for the mozzarella.
I always prefer to use a tube of tomato paste versus canned paste. Even with the tiny cans, I never use the whole thing and then it ends up going to waste. It's also easier and less messy to squeeze the paste directly from the tube into each cup instead of trying to spoon it in.
