Corn Pudding

Corn pudding is a classic Southern comfort dish that perfectly balances a creamy, custardy interior with lightly browned, caramelized edges. Made by baking a mixture of sweet corn, milk, eggs, and butter, it offers a decadent flavor similar to sweet cornbread but with the rich, melt-in-your-mouth texture of a soufflé.

Ingredients
  

Pudding
  • 2- 15 oz cans corn drained
  • 1 stick butter cut into tablespoon sized chunks
  • 3 tbsp white sugar
  • 2 tbsp flour
  • 2/3 cup light cream
  • 4 eggs beaten
  • 2 tsp baking powder
Crunchy Sugar Topping
  • 1/4 cup butter melted
  • 1/4 cup brown sugar
  • 1 tsp cinnamon

Method
 

  1. Heat butter and sugar and stir in flour.
  2. Remove from heat stir in cream, beaten eggs, and baking powder.
  3. Mix well and stir in corn. Pour into 2 quart casserole dish.
  4. Bake 350 for 45 minutes, or until knife comes out clean.
  5. Melt the remaining butter, mix in the brown sugar and cinnamon.
  6. Spread butter mixed with sugar and cinnamon on top.
  7. Bake 5 minutes more.
