Mojito
The ultimate summer escape in a glass. This iconic Cuban classic balances the clean bite of white rum with the crisp snap of fresh, muddled mint and zesty lime, finished with a lively splash of sparkling soda.

Method
- Muddle the Base: Place the mint leaves, 1 lime wedge and the simple syrup into a sturdy highball glass. Use a cocktail muddler to gently press down and twist a few times to release the citrus juices and aromatic mint oils.
- Add the Citrus: Drop the remaining 3 lime wedges into the glass and muddle briefly once more to squeeze out the remaining juices.
- Fill and Pour: Pack the glass nearly to the brim with ice. Pour the white rum directly over the ice.
- Top and Stir: Fill the rest of the glass with club soda. Stir gently from the bottom up to lift the lime, syrup and mint leaves throughout the drink.
- Garnish: Clap a fresh mint sprig between your hands to wake up its aroma, and tuck it neatly into the top of the glass next to the straw.
- Optional: Add a lime wedge and stick of cane sugar.
Do not shred or pulverize the mint leaves, as that will make the drink bitter.

- Strawberry Mojito: Muddle 2–3 fresh, ripe strawberries along with the mint and simple syrup before adding ice.
- Watermelon Mojito: Swap out simple syrup for a splash of agave nectar, and muddle juicy watermelon chunks straight into the glass.
- Pineapple Mojito: Add 1 oz of fresh pineapple juice or muddle pineapple chunks for a tropical sweetness.
- Mango Passion Fruit Mojito: Use mango purée alongside fresh passion fruit pulp to give the drink a thick, vibrant, and tart texture.

- The Old Cuban: Swap the club soda for a dry Champagne or Prosecco, and add a dash of Angostura bitters to create an elegant, upscale rendition.
- Southside: Substitute the white rum entirely for a botanical gin, transforming the beverage into a sharp, crisp classic cocktail.
- Mexican Mojito: Replace the rum with silver tequila and use agave nectar, blending the refreshing nature of a mojito with the bite of a margarita.
