Zero Proof Tonic Rickey

Zero Proof Tonic Rickey

A crisp, ultra-refreshing twist on the classic Washington D.C. staple. Traditionally made with gin or bourbon, lime, and club soda, this zero-proof version swaps the soda for premium tonic water to add an extra layer of botanical complexity and subtle bittersweet flavor.
Prep Time 5 minutes
Servings: 1
Course: Drinks, Mocktail

Ingredients

  • 2 ounces Zero-proof botanical spirit such as Seedlip Garden 108 or Monday Zero Alcohol Gin
  • 1/2 ounce Freshly squeezed lime juice about half a lime
  • 4 ounces Premium tonic water such as Fever-Tree Premium Indian Tonic
  • 1 cup Ice cubes
  • 1 wheel Fresh lime for garnish
  • 1 Sprig Rosemary optional garnish
  • Mint leaves optional garnish

Equipment

  • Bar Spoon

Method

  1. Chill the Glass: Fill a highball or Collins glass to the brim with fresh, solid ice cubes.
  2. Add the Base: Pour the zero-proof botanical spirit and the freshly squeezed lime juice directly over the ice.
  3. Top with Tonic: Slowly pour the tonic water into the glass. Trickling it down the inside wall helps preserve maximum fizz and carbonation.
  4. Stir Gently: Give the drink a quick, gentle stir with a bar spoon to seamlessly blend the lime juice and botanical spirit without flattening the bubbles.
  5. Garnish and Serve: Drop a fresh lime wheel down into the side of the glass against the ice and serve immediately while ice-cold.

Notes

Recipe Variations
  • The Traditionalist: If you want a completely sugar-free, minimalist drink, swap the tonic water back out for pure, crisp club soda or seltzer.
  • The Herbal Twist: Slap a sprig of fresh rosemary or mint against your palm to release its oils and tuck it into the ice for a heavily aromatic cocktail experience.
