Ingredients

  • 12 fresh jalapeño peppers rinsed cut in half and deseeded
  • 8 ounces softened cream cheese
  • 1 cup shredded cheese Cheddar or Mexican blend
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 12 slices bacon cut in half

Equipment

  • 24 toothpicks
  • 1 large baking sheet
  • 1 cooling rack place on baking sheet with jalapenos on top to drain as they cook
  • parchment paper or tin foil to line pan and catch grease

Method

  1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper or a silicone baking mat, then place a cooling rack on top. Set aside.
  2. Prepare the peppers: Rinse and slice the jalapeños in half lengthwise and de-seed.
  3. Make the filling: Using a handheld mixer, beat the cream cheese, shredded cheese and spices until smooth and combined.
  4. Assemble: Spoon the cheese mixture evenly into the 24 jalapeño halves. Wrap each stuffed jalapeño with a half slice of bacon and secure with a toothpick through the center. Arrange on the prepared rack.
  5. Bake for 25–28 minutes, or until the bacon is crisped to your desire
  6. Serve right away.
  7. Store leftovers tightly covered in the refrigerator for up to 4 days. Air fry to reheat and serve.

Notes

Assemble the jalapeños up to 1 day in advance and refrigerate until ready to bake.
Air Fryer: These can also be made in the air fryer in batches. Preheat the air fryer to 375°F for 3–5 minutes. Arrange the assembled jalapeños in a single layer in the basket, leaving space between each one so the bacon crisps properly and does not stick together. Air fry for 10–12 minutes, or until the bacon is crisp. Transfer to a plate and repeat with the remaining peppers.
