Blueberry Thyme Gin and Tonic
This summer cocktail a vibrant twist on a classic. It combines the botanical notes of gin with the sweet and tangy flavor of blueberries and the aromatic touch of fresh thyme. This refreshing drink offers a unique and flavorful experience that's both visually stunning and delicious.

Method
Blueberry Simple Syrup (Optional)
- In a small saucepan, add your blueberries, water, and sugar.
- Bring the mixture to a quick boil, then reduce the heat and let the mixture simmer for 7-10 minutes. Use a spoon or potato masher to mash the blueberries as they soften.
- Remove from the heat and allow to cool for at least 5 minutes.
- Then strain through a fine mesh strainer to remove all the pulp. You can store the syrup in an airtight container in the fridge for a week or two.
Cocktail
- In a glass, combine blueberry simple syrup (optional), blueberries, thyme, lemon juice and gin or vodka.
- Use a muddler to smash and mix all the ingredients.
- Fill glass with ice, then top with tonic water and stir gently.
- Add a few fresh blueberries.
- Enjoy!!!
Notes
The simple syrup is optional, but adds a sweeter taste and stronger blueberry flavor.
You can make this in advance and store it in a mason jar or air tight container for up to two weeks in the refrigerator.Â
You can also sub the blueberries out for blackberries for another delicious simple syrup.Â
