Ingredients
- 2 lbs boneless skinless chicken thighs or thin chicken breast cutlets
- 1 tbsp extra virgin olive oil
- 1 tbsp butter
- 4 cloves garlic minced
- 1 cup chicken broth
- 1 cup heavy whipping cream
- 1/2 cup chopped sun-dried tomatoes
- 1 cup grated parmesan cheese
- 1 tbsp Italian seasoning
- 1 tsp paprika
- 1 tsp red pepper flakes
- Salt and pepper to taste
- 1 tbsp fresh basil leaves sliced
Method
- Pat the chicken dry with paper towels. Generously season both sides with salt, black pepper, and paprika.
- Heat the olive oil and melt the butter in a large skillet over medium-high heat.
- Brown the chicken for 3 to 4 minutes on each side until golden, then transfer it to a plate and cover it with foil.
- Turn the heat down to medium-low.
- Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
- Pour in the chicken broth, using a wooden spoon to scrape up all the delicious browned bits from the bottom of the pan.
- Stir in the heavy whipping cream, Italian seasoning, red pepper flakes, salt, and pepper.
- Let the sauce heat through gently without letting it reach a hard boil.
- Whisk in the grated parmesan cheese a little bit at a time to keep it smooth and prevent clumping.
- Stir constantly until the cheese completely melts, then mix in the chopped sun-dried tomatoes.
- Return the chicken and its juices back into the skillet.
- Simmer for a few minutes until the sauce thickens and the chicken reaches an internal temperature of 165°F.
- Garnish with the fresh basil and serve immediately.
