Marry Me Chicken

Golden pan-seared chicken simmered in a luxurious cream sauce infused with garlic, sun-dried tomatoes, parmesan, and a hint of red pepper flakes. Famously named because the flavors are so incredibly delicious that it is said to elicit marriage proposals on the spot.

Ingredients
  

  • 2 lbs boneless skinless chicken thighs or thin chicken breast cutlets
  • 1 tbsp extra virgin olive oil
  • 1 tbsp butter
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy whipping cream
  • 1/2 cup chopped sun-dried tomatoes
  • 1 cup grated parmesan cheese
  • 1 tbsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp red pepper flakes
  • Salt and pepper to taste
  • 1 tbsp fresh basil leaves sliced

Method
 

  1. Pat the chicken dry with paper towels. Generously season both sides with salt, black pepper, and paprika.
  2. Heat the olive oil and melt the butter in a large skillet over medium-high heat.
  3. Brown the chicken for 3 to 4 minutes on each side until golden, then transfer it to a plate and cover it with foil.
  4. Turn the heat down to medium-low.
  5. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  6. Pour in the chicken broth, using a wooden spoon to scrape up all the delicious browned bits from the bottom of the pan.
  7. Stir in the heavy whipping cream, Italian seasoning, red pepper flakes, salt, and pepper.
  8. Let the sauce heat through gently without letting it reach a hard boil.
  9. Whisk in the grated parmesan cheese a little bit at a time to keep it smooth and prevent clumping.
  10. Stir constantly until the cheese completely melts, then mix in the chopped sun-dried tomatoes.
  11. Return the chicken and its juices back into the skillet.
  12. Simmer for a few minutes until the sauce thickens and the chicken reaches an internal temperature of 165°F.
  13. Garnish with the fresh basil and serve immediately.
